Since you are a medium armour user, tailor would be a useful craft if you want to make the armours yourself.
Also, I find useful the tinker profession, for the ability to make all the jewlery yourself.

The best crafting professions for making\saving money are Jeweller, Scholar, Farmer+Cook & weaponsmith.
If this is your first character; I would go with one of those because they will help you make money in later levels.

If this is an alt and you are kinless; I would choose woodworker. Why? Because you will be able to make your own spear and javalins while leveling up. You will rarely find then on the auction house, and Turbine hasn't put too many of them in as quest rewards compared to weapons for other classes.

If you are in a kinship; I would ask if anyone is a woodworker that can make your weapons; then choose to be a Jeweller, Scholar, Farmer+Cook or weaponsmith.

Jeweller, or tailor, or scholar, or farmer/cook

That is: Tinker so you can make jewellery (7 pieces) and harvest metal ores to sell for the cash you'll need, or Explorer so you can make the armor (7 pieces) you'll need and harvest wood and metal to sell, or Historian (hardest to level) for the consumables you'll use, or Yeoman (easiest to level assuming you have cash) to make all the food you'll use.

But really, you can't go wrong with any one of these four.

No matter what you choose, it will be "useful" - but some are more useful than others. Namely, Tailor or Jeweller.

Cook takes up a lot of room (if you're free-to-play, you typically don't have a lot of extra storage). Also, foods give one nice small short-term bonus - armour (Tailor) or jewellery have seven slots to fill with custom goodness.

Scholar is... not immediately useful, and sometimes hard(er) to Level up. Again, temporary bonuses via a consumable vs. 7 bonuses via Jeweller or Tailor.

Woodworker? If you can't find someone to make you one or two weapons every 5 levels or so, you're in the wrong Kin, or just aren't trying.

(Also, Tailor not only gives Stat bonuses, but higher Armour values - double win.)
