Champion - Dwarf or Elf. Considering the battle fervor that Champions go to, the two more martial races make the most sense. Not that Man isn't appropriate, but elves are stronger than they look...
Captain - Man. Because... we don't really have a choice in the matter.
Guardian - Dwarf or, ironically, Hobbit. When I think of a Hobbit Guardian, it makes me think of Pippin and Merry, and I feel happy.
Hunter - Honestly, any race. The hunter is, more or less, what it says on the tin, a guy who hunts. Hobbits likes them some pork, and it isn't practical to use JUST livestock.
Lore-master - Mmm... character-wise? Elf, due to their longevity. Appearance-wise? Man, due to being able to look like a Wizard. Personally? Woman, due to Lore Master being able to fill the "Hedge witch/healer" personality, which is more or less a woman experienced in the art of herb lore and leech lore, able to heal people of maladies using folk lore.
Minstrel - Man, Elf, or Dwarf. Because Men love a good tale with song, Dwarves sing to pass the time, and Elves were known for beautiful music. Hobbits... ehhhh.
Rune-keeper - Elf. Because the one who forged the rings wasn't a dwarf, he was an elf. Not to mention, Elves are the closest to Men, and I love Rune-keeper for their reference to the Nordic/Anglo-saxon Runes, and the culture who made those runes also inspired much of Middle Earth.
Warden - Man, because Men are expanding, making more villages, so they need someone who can run between villages in times of need, or something like that.
Beauty is not a feminine trait. Strength is not a masculine trait.
Here is one good reason why hobbit burgs leave the rest standing. The racial trait "stoop for a stone". Every non-hobbit burg is stuck with using a crafted consumable ( throwing knives/axes/whatever) to gain a ranged pull attack. Whilst those attacks do more damage, that isn't really the point. The range pull decides that you fight the mob where YOU are ( unless it also has range attack, even then, most archer types will, eventually, close with you) as opposed to fighting the mob where IT is. Additional damage is just icing on the cake.
The race bonuses early on in the game are a big help, However just take into consideration that these bonuses don't mater as much around level 30 and onward, so here's the list.
Burglar- I would say a hobbit for the innate health bonuses. These can help during early game-time. However the Human would b good as well, considering they gain a hefty little +15 might, which cant help your Physical Mitigation.

Champion- Definitely The Race of Man or a dwarf, as they both get Might bonuses (The Dwarf only gets +10 might but also receives a few vitality)
Guardian- Definitely a Human, Although they don't receive any health bonuses. Your a guardian so that nice little +15 Might Helps a lot
Hunter- Best as an elf, as they receive a nice little +15 Agility Bonus as a race bonus.
Minstrel- AVOID THE ELF, Elves start with -20 health as a race 'bonus', And since the minstrel is extremely squishy early game this can result in death and get your Undefeated titles taken away. Its best to start with a Dwarf or a Hobbit. Dwarves because of the nice health bonus, and hobbits because of the health bonus as well. Hobbits also receive a +1% fear resistance trait, Fear is what causes your tactical attacks to do less damage and causes silences.
Rune-keeper- Since the Rune-keeper can heal itself so this choice really doesn't matter, However i you would like to increase survivability, Go for the Dwarf.
Wardens- I would say depend on your preferences, This class doesn't matter much as well as wardens can receive Self healing gambits. Humans get might so this will increase damage, Hobbit wardens (although i think they are a joke) Get the health buff, but their small size decreases the damage they do because they get an Innate -15 might. Elves have Agi bonuses (which if you are planning to use the javelin a lot) is very good.
As i said before, The race does not really mater at Later on in-game, as the armour you get starts to increase.

Not to mention, the burglar's real damage comes out when you stab a target in the back, not throw a rock at it.

Both are good choices. And although everyone sees hobbits as burglars due to Bilbo, hobbits weren't particularily good at anything besides eating. I leaned towards Human because of the natural greed.

Gotta go with Dread on this one. The Elf champion just doesn't make a lot of sense for me. A champion is more like a berserker, someone who charges in and gets lost in the heat of battle. Elves have a tendency to think too much imo.

Definately a dwarf. Stout, loud, obnoxious, and generally drunk. Who better to sufficiently piss off the enemy to the point where they don't see the rest of the battle? Although, I can think of a few huntards on GLFF that do a better job...

Gotta agree with Zachski if we're going lore based. But with racial bonuses, which hardly matter at cap these days, elf is a better choice for hunter if going with in game bonuses.

Hobbit feign death. Nothing more needs to be said. How many times a minnie flop has saved raid time I can't count. How many times the minnie screwed up that flop and a hobbit flop would have saved the day, well, lost count on that too... Oddly enough, both my minnies are human

Well, lore wise either race suffices since there isn't any lore base to this class... However, I leaned towards elf for their broader knowledge base, dwarves were more war-like, less study-like...

Anything but dwarf, leaning away from elf as well... A medium armour defender, the warden is more of the 'any-man' class, as in, anyone can strap on a wooden shield and sharpen a stick into a spear and get started.
Most of initial racial traits have traits that later offset them...like the hobbit one that starts out with - might, but can quite quickly be offset with hobbit stature.
Unless you're obessed with being the absolute best at whatever, you should just pick what you have always wanted to play since you first read the books or watched the movies. For years I kept trying to make something the best in this game instead of doing what I wanted. (I always wanted to play a hobbit warrior akin to Merry or Pippin, but held myself back because of threads like this one.)
Besides it's fun to be unique and throw some roles on their heads.
Also, many of the initial traits and later earned traits you get with each race isn't really that big of a deal. The man heal everyone talks about is on an hour timer. Is that really going to have some huge impact on your game? If you plan on becoming a sparring pvp'er, maybe, but the vast majority of the rest of us, no. In my opinion, the racials are there for flair.
