This evening I downloaded and began playing LOTRO. One of the first things that stuck out to me after playing was when a player ran up and bowed to me. Later also in my log it said some player was dancing with another player.
How exactly do you perform these actions?
I also saw two players sparring and am unsure how to request to do so with another player?

These animations are called emotes. There are two common ways to access them:
1) You know the chat command. /bow in the chat window input line
2) You can also access them via the chat context menu in the chat system. Click on the little button on the bottom left. Select emotes - scroll thru the pages.

Left click on the avatar of character to select them. Right click on their portrait. You will get a context sensitive menu of operations that you can perform on the selected character. One of the choice is a "Spar Request".
Many people - including me - do not Spar - I turned off the presentation of the Challenge to a Duel. You get a auto reject. Some people do not like surprise Spar Requests. You might want to send a private tell to the person you want duel to find out if they are interested.
One of the reasons I turned off Spar requests is that a lot of people do not ask. Due to a clumsy design of the UI. It is very easy to find yourself in Spar. You will be typing or something. The Challenge forces itself to the front. The next key you type ends up accepting the request. You will see the Challenge appear, disappear, the fight has started before you know what is going on.

Note that while there are a ton of emotes granted by default, there are lots more that you can earn. If it exists but you haven't earned it yet, trying to do it by typing it in the chat window will result in a "You don't know the ____ emote...yet..." message (or something along those lines). If the emote doesn't exist at all, it will just say "Unknown Command" as the error message. There are tons of ways to unlock emotes. Sometimes you can get them as prizes during festivals, some are granted through hidden deeds, etc.
Also, lots of emotes have different text when you have something targeted vs. nothing targeted. Some emotes unfortunately do not have an animation, like /hug.
it's also helpful to know that some consumable items, bought through festival tokens (we're on spring leaves atm) can 'make' you do an emote as well. They're items you "use" on other players, that provide a particular effect. So if you see a dragon and someone bursting into flame, don't panick (it's just one of the consumables) I know it freaked me out the first time I saw it, so thought I'd mention, lol
