I'm fairly newly 75, using a 75 2A Legendary, and a garbage 3A emblem, relatively well geared (compared to being awfully geared when I was leveling up) and familiar enough with my class. I group with a couple guildies, loremaster and minstrel both 75.
We've done the Isengard 3-man instances surprisingly smoothly with me tanking, i.e. no wipes (I didn't really think I was capable but apparently I was wrong), and we have played together for a while and mesh pretty well. We've done the full fellowship quests in limlight (the mining one in particular was fun with 3 new 75s). Given the limited information I've provided, what else could the 3 of us accomplish with me tanking? I'm working up a Warden as a fallback if it turns out that that's about the extent of it.
We're not really into raiding and it's just the 3 of us so 6man is out as well. Are there any 6mans at 75ish that are doable with our makeup? Older 6mans that are worth doing and possible, etc?
Right now I'm running around in 75 rep gear from dunlendings/rohirrim/stangard, and I've begun crafting my kinmates the great river stuff for tailor. Don't really have a source of great river armor for myself since for some reason I chose Tailor for this guy, so bear that in mind as that's likely to be how I'll remain for the time being.

You can definitely do the level 50 unscaled 6-mans, like Carn Dum, Urugarth, and BG with that makeup. You may also be able to do some of the level 56-60 6-mans in Moria like Forgotten Treasury, Grand Stairs, Halls of Crafting, etc. I'm not sure how well you'll fare at the level 65 6-mans like Lost Temple and Sammath Gul, but you'll never know until you try!
The better you are geared, the easier it will be for you to run these instances. Since you and your friends will not be getting raid-level gear, undermanning on-level instances will be very rough for you, especially with 2 support classes and a healing class. However, you can still have fun doing all the 3-mans! Good luck and have fun out there.

Stuff I would get for a captain tank:
Full Tognir set
Tactical mit cloak from Pits
Great River guild crafted tactical mit necklace
Both PvMP rings
Martyr teal and purple arrings with teal pocket (gives you a bubble)
All that's left is tuning LIs for tanking and findinf decent bracelets. If you want to skip the Tognir set, you can always piecemeil the armor, provided you focus heavily on vit stacking.

Yeah, the three of you should be able to run any 6 man from Moria down. Grand Stair, etc. Depending on how good you are at tanking, you could probably do the Mirkwood stuff too. With better gear and legacies specifically for tanking, you should be able to do Mirkwood stuff.
Limelight can easily be done with a Cappy as a tank seeing as most of the time you're fighting only one or two. The real issue for cappies tanking is when you start getting up towards 3, 4 or 5 enemies.
On my hunter, I've run Fangorn's Edge and The Pits with a cappy tank and no problems. I haven't run the other one with just a cappy, but I imagine if everyone's careful and pays attention you could do it.

Yeah, the Limlight gorge quest where you had to mine junk was fine up until the last step where you had to fight 3 of those trolls. 2 of them I can hold and stand them beating on me, 3 not so much. The minstrel and loremaster had to constantly fear/stun one of them and keep em that way until we finished it.

I think that's pretty normal to need some CC on the trolls. When I did those quests we had two hunters, RK and a Cappy. It wasn't too bad because I just rooted, stunned, feared one troll the whole time while the cappy kept the other two busy. Basically the same thing your LM did. A LM makes that last quest really easy because they have so much crowd control.

As you said you didn't want to raid, the Tognir set is out. But "The Leaders Armour" is available to you, and is likely to be the best tanking set available, without raiding (The heavy focus on vitality rather than might making it a better choice than the medallion sets from Galtrev, and you can get all 5 pieces).

Assuming you can hook up with a ToO T1 Pug (and then clear the instance) as a non-tank captain, you can unlock the armor set and use it. You can then run 3 and 6 mans for the seals, and get it that way.
I'm just throwing it out there because the ToO sets aren't as hard to get (and unlock) as one might think.

I tanked Darg t2 on my captain just fine. The healer went link dead during the last fight and the dps traited rk managed to keep me up after a use of the Bauble Bubble. You can imagine the surprise he felt when he loaded back in to find loot waiting for him instead of a dread wipe.
