I've been looking around for a decent guide on how to play a Champion, what stats to go for, etc. etc. but the guides I've read (including lotro-wiki) are quite obviously out of date. Where do people go (aside from here) when they have questions about stats, skills or tactics?

Going through the threads here is a pretty good jumping off point. There are several referencing trait/virtue setups Cp DOS and tanking, likewise with gear setups and rotations.
In a general sense your objective should be to stack Might and Mitigations (either through higher armor totals or raw +PhysMit / +TacMit ). You want the might to kill faster and the mitigations to avoid dying too often. Make sure you have the best DOS possible whether it be 2H or DW and make sure you have the highest armor rating possible congruent with focusing of +Might and +PhysMastery.
