I've got 4 characters and want to play 1 as main, and other 3 for mostly crafting to begin with but will slow progression leveling up. Thinking one day a week for each of the 3 and 4 days for main? Anyway I have a hunter, a minstrel, a rune keeper and a guardian. Simply because I wanted to play those. Now I'm trying to decide on what crafts to pick for which?
ok so my thoughts were:
guardian as armsman for the weapons making, metal or wood.
minstrel as farmer/cook, basically cos a hobbit loves food so makes best cook lol
rune keeper as jeweler, so as to make own runes and jewelry for all
This leaves my main, a hunter. I can't decide between woodsman or scholar?
Now the highest lvl I've had a character so far is 16, which means I really have no clue how things work later on in game. So I'm asking for advice as I want to get them started now and not need to change later.

Generally it doesn't matter, especially if you plan on leveling multiple alts. Any one of them can do anything. If you want to get picky, do a breakdown of the crafting professions and the items they make, and who they are usable by.
Scholars make potions and scrolls used by everyone, books used by Loremasters, Hunters, and Minstrels, oils used by Hunters and Wardens, and potions used by Hunters and Captains.
Weaponsmiths make weapons, used by everyone except Loremasters and Rune-Keepers.
Metalsmiths make tools used by all crafting professions, plus heavy armor used by Guardians, Champions, and Captains, and chisels used by Rune-Keepers.
Tailors make medium and light armor used by everyone.
Cooks make food used by everyone.
Jewlers make jewelry and tokens used by everyone, plus rune-stones used by Rune-Keepers.
My only advice is to NOT make your character craft the goods that he/she will use. If you level crafting with your character then during the period of time that your character can make the most use of a particular piece of armor/weapon/jewelry/whatever on-level, you probably won't be able to craft it (at least not the crit version). Then by the time you can craft the crit version of something you have already out-leveled it.
In my case I made my main a Scholar/Farmer/Weaponsmith Hunter. He relied mainly on the AH and quest rewards for armor and weapons. I leveled him to cap (L50 at the time). Then I rolled some alts and leveled them to around L20, and had the Hunter send them all of the mats that they needed. My second alt was the Tailer/Prospector/Forester Minstrel. She could use many of the materials gathered by the Hunter, and harvest ore as needed (which my Hunter and alts also augmented with the AH and bulk orders). Next up was the Cook/Jeweler/Prospector Guardian. Then a Metalsmith/(whatever else comes with it) Champion. I pretty much pushed all of their crafting skills through at least Tier 4 (Hunter is Tier 7), and the alts are all L30-35 at this point. But for the most part, other than my Hunter each of them has had a full set of crit-crafted armor on-level, crit-crafted weapons, crit-crafted runestones and jewelry, potions, scrolls, etc. I know that some people frown on spending time or money on good armor/weapons/jewelry until you hit cap, but if you can craft it all yourself them it really makes a difference in survivability.

Make your main an explorer that way your highest level toon is always able to supply
Items/raw meterials Ore Logs Hides to your other toons to craft with.

Nickstern, That's what I wanted to avoid if possible. I don't really want her to 'just collect' but to use too. However it may be a better option even though I don't like it. At the moment she's a woodsman and it is a little frustrating seeing all the ore that she can't collect.
It does sound like there's not much point her being woodsman if she should buy her weapons? So maybe scholar would be a better option, to then be able to supply her other needs later and crit runes for rune keeper later? Darn it I want her to craft too but now I'm undecided.
I have changed craft before, and noticed it doesn't remove the tools from inventory. Would it be an option to change to explorer, get the tools, then change to something else but still use the tools to collect? Or would the system refuse to let me use them if I no longer have the ability for crafting with them?
[also noticed you get 3 ingredient bags every time you complete the practice makes perfect quest, which can be done again when you change craft]

Slightly different approach.
If you are playing a heavy, ensure one of your alts is a metalsmith.
If you are playing a medium, ensure one of your alts is a tailor.
Jeweller (Tinker) and Farmer and Scholar (Historian) are self-supporting crafts.
Tinker and Historian also fit together beautifully, as the Historian can make mats for the Tinker's cooking, and the Tinker can supply the Historian with raw ore for his weapons. The work of Jewellers and Scholars is always sought after on the AH, too.

A bit old thread, but my contribution to it.
You can definitely make a profession for a character with which you actually want to craft stuff for him to wear. So let's say, you pick metalsmith for your guardian.
The key is to not out-level your crafting tier, ore mines take precedence over all other things. I'm leveling a champ now, lvl 22. Almost done with mastery of tier 2 and already can craft tier 3. I didn't farm ore at all, by this meaning that when i play, i never go specifically to farm ore, i quest and pick-up all the mines that i encounter. But, when i quest, i keep my mining radar on, and if i see that blue arrow, i doesn't matter what i am doing, i go straight for the mine and get the ore. Basically, you level normally but you take extreme attention to any ore mine available and you mine all of them, no exception. may slow down your leveling a bit, but not much. For example, between level 16 and 20, questing in bree, west part, i gathered 180 barrow-iron. I crafted all of it, got to mastery level and made 182/560 in there as well. Now, i'm 22 and i have 90 ore already in my bags. When i finish all of bree i will probably have more than enough ore to go and finish Tier 2 so when i go to Lone-lands, i'm already ready to go fully on Tier 3.
And also, i have on me only lvl 18-20 gear. So the right stuff for my level. When i hit lone-lands, i'll craft the tier 3 gear, which is perfect for lvl 24-25.
