That's OK. I'm not one to complain, but then last night I see another human champion ONE level higher with 3800 health! Yeesh.
My question is HOW can I become less pathetic? I want health the goes along with my romantic man-eyes.
the main thing for leveling a champion is that you can do good damage. I put more stats towards my dps stats rather than morale. But, if you'd wish to sacrifice some of that damage for morale, then go for gear that adds to vitality and morale in general. Also look for virtues that offer a morale bonus.
I always like going South; somehow, it feels like going downhill.

We do not have stat caps any more. You have to decide how to build out your character. You need enough morale so that you do not get one or two shotted by opponents. After that point you have to decide - What you want? Do you want to hit more often? Do you want higher mitigation? Do you want to hit harder when you hit something? Do you want (fill in the blank)???
Not all Champions are DPS killing machines. Some of them are slanted more to survival and off tanking. It is personal choice. Do you want to be a Tank Champion? Hold the aggro and survive as your DPS team team takes them out by the numbers with out driving the healers crazy. Keeping the mob from turning on the glass cannons like the Hunters and Rune Keepers?
Or would you rather have a Guardian tank for the DPS team? Or another Champion? You be one of the killers.
Both are valid game play styles. It is up to you. Feel free to find another choice.

Honestly it all depends on what you are looking for. Is your level 56 champ being squishy? Are you constantly dying? If so then there might be a problem, however if you're doing fine and you're not constantly struggling, then why change your formula?
From my personal experience I focus heavily on Might and Vitality. In comparison to you I have my level 38 Champ with about 2500 morale. That does not mean my champ is "better" than yours, it's just the way I built it. If you'd like you can check out my toon, Andolvith, and look at my items and check it out.
Having checked yours out I notice you put A LOT of emphasis on power. Being champions we have our stances which make up for our power regen, I think you can find some jewelry that might be more suited towards Might, Vitality and Agility.

Yesterday I met a fellow lvl75 champ with almost 12k morale while I'm sitting on meager 7k something ... doesn't make me feel awful, lemme tell you why:
I was in Fervour and was wearing my dps gear (armour + jewellery focusing on might + crit)
He was in Glory and sure was equipped for tanking (armour + jewellery for vit + mitigations)
If we both would fight the same mob, I would kill the mob fast and might loose some morale taking hits. He would not feel any hits and loose no morale, but the fight would take some more time due to dealing low damage. Neither of us would be the better, we both would kill the mob.
Especially when going solo, it's your decision if you prefer 'the dps race' or rather be 'slow but safe and sturdy'. In fellowships it's more the role others want/need you to be, (off) tank or damage dealer.
Some people play around with their builds to see whats possible ... like the champ who recently dropped all other stats for morale. Instead of comparing (single) stats you should compare in certain situations. If you're both supposed to kill adds quick before they call for backup that easily wipes a group (Roots of Fangorn goblin anyone?), rely on your groups healer to keep you going. No need to tank, spank all you can ... FAST! The tanky champ might not get this job done fast enough. Low-morale DPS machine champ might come out the fight with little morale (HEAL PLS ! GIMME HEAL!! HEEEEEEEAAAAL!!!argh ... uhm ... rez pls) but at least he prevented a group wipe.
TL;DR: Build your champ to fit your playstyle, try to fit your champ role. Stay flexible and the world is ours ... SHINGSHING!

let me see, I wander around with 1649 mightish with 7k health and 2.4k power at lvl 75, there are many champs with way better gear than me, yet I noticed that I do just fine in PvE. Theres no need to be the best of the best, you will do just fine as you are. OFC there will be those who raid 24/7 and get whatever gear they point at, but that doesnt mean they are the best

Sometimes I forget to upgrade my equipment.. usualy when I quest a lot etc. I was once running with my LI completely without runes, gems etc.. Don't forget to get decent jewellery and armour either in AH or from Reputation vendors (if you are questing a lot in certain region)
