STO went f2p so I figured I'd give it a try. I have been enjoying it, but I expect to burn out soon seeing as how I've been spending 10 hours a day playing it for almost a week now. :|

Not to sway you one way or the other or get into a huge nerd-out, but the SW universe (not just referring to the game alone) is actually not as black and white as that. It's actually much more complicated.
Picard. He was far more rational where as Kirk needed a Vulcan by his side to compensate for his lack of rationality.

It's not much more complicated than that. The only third or neutral faction that one could even consider would be the hutt cartels. The whole explanation of the force is even black/white. It is a bit silly.

The entirety of the universe, politics and even the force is more complex than that. Not all characters are so one dimensional nor the reasons behind the the choices made. A lot of it is a matter of perspective when you really delve into the universe as a whole. If you take it as face value just from the movies, then sure, it comes across as more black and white, but even within them there are some hints at the shades of grey and more about the "why" as opposed to simply "because this is bad and this is good". There are also more than just 3 factions or good, evil and neutral, just not from the movies.
Not that I actually recommend you go off and learn more about the whole universe or start reading the books or anything, but there is a lot more to it when you really get involved. It's hard to compare a few movies telling just a few years of a history of a few characters to countless episodes and movies of a story that covers a vast history of worlds and people... which is what I assume you have done. If I'm wrong and you've delved further into the SW universe than that, I apologize. It's a pretty rich universe spanning countless years, characters and histories. As for the game, a lot of this comes out and is included as well... just to keep it in the context of gaming. heh. Funny thing is, I never even thought I'd like the game.
But that's just my experience having grown up with SW. And I'm in no way making a debate over SW vs ST, both are awesome in their own way. Just giving my view on what I know about SW.

SWTOR owns hard, especially for a game in its infancy. The PvE and story lines are terrific. Yes, I actually am LOVING the PvE. Even Chef loves the PvE. The quests and the stories are great as well as the interactive nature of them. There's a lot of challenging content as you go along. There's also the time I totally think I banged my companion when trying to raise my affection. It was really gross and I felt so dirty and cheap after. Screen just faded to black and we came back a couple minutes later. I guess it was worth it for the affection gain. Ugh.
You get a number of companions to choose from and they are freakin awesome. Seriously. Tanks, DD, Healer, combinations DD/Healer types, etc. They work incredibly well. It's actually pretty intelligent, functional and effective AI. You can choose to be in control, but I find they are awesome on their own. You can manage to do a lot of group quests without finding people to help because of them. Chef and I have mowed over some group and Heroic quests with our companions. Might take a bit longer, some trial and error, some more strategy and patience, but still very effective if you like a challenge.
There's so much customization for your class. 4 main classes on each side that mirror each other. Each class then gets to choose an advanced class at 10 and from there you get to choose how to make your class based on 3 trees. Can put all your points in one or spread them over all 3 and make a hybrid. Usually a class will be split in two, something like DD/Tank on one side and DD/Heal on the other. Then the trees will be broken up into DD, CC and Heals. Something like that. I've, of course, gone full pocket healer.
Gear can also be totally customizable, allowing you to keep something that looks nice and modding it as you level up to increase your stats. I believe they are working on adding more customization.
Graphically it's pretty great considering there are some issues to be ironed out and it's not full high yet.
Crafting is nice because you don't have to stop everything to do it. You make your companions do all the work for you. So you can PvP like a boss while your little crew runs around doing errands. They will even sell the junk in your inventory for you when it gets full so you don't have to run to town.
Space battles are fun little mini games with tons of xp and money to be earned. Very classic SW movie style space battles with various objectives.
The PvP instances are a lot of fun, sometimes annoying due to the random dopes you get hooked up with or the afk morons, but in general it's more fun than not. There are objectives to be completed in terms of the instance as well as gaining medals for damage done, healing done, guarding, kills, etc. YES, healers get credit. Huttball is my least favorite, in fact I kind of hate it, fortunately since switching to republic side Huttball isn't so common. It's the only one that can be played against your own side, so rolling Imperial side with the massive numbers playing there compared to Republic ensures a lot more Huttball.
Open world PvP is entertaining... especially when you get the bored 50s camping towns for lowbies and ganking them during quests. You'll see the call in chat for help and in come a bunch of lowbies to take on the big bad 50s. It's hilarious. Chef and I managed to kill one of these losers (with NPC help, of course) and it was hilarious knowing the rageface he must have had. Had some nice little fights with people more our level as well. Found some courtesy from high level gankers who wail you once, then let you rez and leave you be after. Got to kill some foul-mouthed Imps who were being jerks when they ganked us which was completely satisfying. Needless to say, they didn't have anything to say after we got them back and owned them hard.
Haven't reached 50 yet, so I can't speak for Ilum (the end game PvP), but it's in need of help but not through any real fault of BW's. The issue really is there are too many Imps. You think the zergfest on Ridder is bad? You haven't seen anything until you see 50+ Imps zerging 1 Republic guy. Not to say it's always like this and I have people who run through Ilum, but it has been an issue due to the imbalance in numbers. I have heard, however, that both sides will often work together so they can both complete the objectives of their dailies. Trading kill for a kill and allowing sides to complete a task. So there apparently is some niceness in the community of WoWtards (there's a lot of those, heh).
Best of all PvP has a purpose and tons of rewards.
The nice thing too is that BW is really responsive to and involved in the community. They are constantly working to fix issues and update things. I won't say the game is perfect, there are problems/bugs, but it's early. Overall I think they've done a terrific job and I'm having a blast with it.

Far as I'm aware the only people who bailed out back to LOTRO are Rubi and Rikz, though we've caught Cletus playing it a few times :P

I love it and I rock hard, of course it helps that I have an uber partner(s) in crime. 3 of the classes have healing trees, my main is Jedi Consular/Sith Inquisitor and it's nonstop action. Healing, bubbles (not LOTRO style), combined with CC and damage dealing when I'm not busy spamming heals.
You can also be a healy pewpewer. I haven't much experience playing Smuggler/Imperial Agent, but Trooper/Bounty Hunter was pretty fun as a healer. Entertaining shooting at things to heal them.

I have a 50 Operative (Agent Advanced class that can heal) and have to say healing on that was quite fun. Takes some getting used to but once you do, it is pretty much impossible to run out of energy (your resource).
