Others have already commented on the annoying drop from 4 bunches/bundles to 1, massively extending the time needed to cook, but I didn't see a subject which addressed the other major negative change.
The fancy soils can't be bought, they can only be dropped or are a small % side effect of farming. Add that to the new herb, and farmers must find two crit mats to help cooks make the better items. Completely unfair, rude and badly thought out.
I just did my first 60 fields. I got 15 herbs (25% isn't bad) but only 5 soils. That's atrocious and a disincentive to farming. It used to be slow enough, but Turbine has made farming into a complete time wasting grind, both in the field and out around Middle Earth.

I think it depends on what KIND of field you go for... there are two different types (via multi-output recipe). I've found that one produces more herbs, and the other produces more soil. Chances are you're farming the wrong type of field.
I could be completely wrong on this, so it would be interesting to know what others have experienced.
EDIT: According to a few of the guides I have read, the "hearty" version of each recipe drops more herbs and soils, although the seeds are more expensive.

The soil is only helpful if you are planting regular fields. Or perhaps the flower field. Using soil on Hearty field does not seem to do anything. I do not notice any different between a Hearty field and a Well Tended Hearty field.
