I have a level 65 character who not so long ago reached Supreme Master Prospector. This is my first character, and he is a Tinker, and aside from some cookery (thanks to an alt who I was trying to advance in Farming), Prospector is the only profession (vocation? I get them mixed up) that I've really advanced, thanks to all the mining nodes everywhere.
So my question is Now What? Unlike some of the other professions, I guess, there aren't really any guild recipes or things that I can craft as a prospector. So what does one usually do with a Supreme Master Prospector? Should I just basically try to sell Khazad ore on the AH, and that's it? I haven't done much with crafting in the game so now I'm thinking that I chose the wrong one to advance since there doesn't seem to be much benefit in the end.
Since you say that your character is a tinker the most obvious choice is to advance the jeweler part of your profession, as that is the main purpose of a tinker, you could also switch to a weapon smith or armorer since that would allow you to keep your prospecting skill.
Prospecting, forestry and farming are considered gathering professions and don't have alot of use accept to support the production professions which are Jeweller, Cook, Tailor, Weaponsmith, Metalsmith, Woodworking and Scholar.
As the poster above mentioned, you need to advance the production part of your vocation which is where you will get to make things for yourself or to sell. Also only production skills can join a crafting guild and make the craft-able relics for your LI's.
So if you stay with Tinker you should level your cook or jeweller or both.
So what does one usually do with a Supreme Master Prospector?
You gather materials and sell them. In every game with a crafting system that uses harvested materials, gathering is a good steady income source. Pick up all that ore and sell it.
I made 25 gold this week selling raw materials. It is not as sexy as selling a level 65 second age Hunter bow - woodworker product. Mind you I had a lot of raw materials saved up. I kept picking them up. Stuffing them in my vaults. This week I decide. Why do I have 1,000+ units of K-Iron ore?
Selling finished products requires some effort. It seems like everybody has production crafters. All these crafters are making goods. Chasing a small number of potential customers that do not make their own stuff. You are going to sell jewelery. People buy the guild recipes one shots at tier 6. You need mithril flakes for these products. They also buy certain kinds of critical result food. The regular food not so much.
I eat regular food for doing a lot of content. I sell the critical products. The silver I made for selling the crits pays for all the food I make. I usually have some left over.

Unless stated otherwise, all content in this post is My Personal Opinion.
I would like to add that I elected to go with the Explorer profession with my main character. This profession includes Forester, Tailer and Prospecter. The Prospector is the easiest to advance and the best way to make money quickly since it is the source of resources for several other professions and is also easy to harvest since ore is found on your map unlike jewels, and hides. It is also more abundant and easy to sell. Once you are fully proficient, you can harvest and sell immediately in raw form without having to spend money on coal to make ingots, there are many lower level prospecters eager to pay for bulk ore to process rather than going through the time to harvest. I make tons by going to the Auction house and finding out which ore is not readily available in the AC and then posting several offers of different quantities and durations and it guarantees and big cash return each time I login.
Let others spend the time and money making goods, harvesters rule and have more time to devote to quests and gameplay.
