Depends on a lot of things, really.
Among other things
WS - pretty much useful until you hit LIs and won't be again until you do the craftables. And until then, you only craft 1 - 2 per char, while you have 6 armor pieces.
MS - pretty much useful until the end unless you do raid/group stuff that can yield "better" gear. So soloers, it's quite invaluable, IMO.

Doesn't matter based on this character. For the most part you can't craft stuff for yourself, because the good stuff that you craft must be crited or its worthless. And you can't get to mastery leveling for the most part until you are past that area. Base your vocation on what you think your next alts will be.
Armour is always useful at low levels and its 6 peices as opposed to 1-3 for your weapons. Go with Armourer where you can also be a tailor, then you can create all types of armour for your next character.

Being able to craft your own gear isn't even remotely as beneficial as being able to craft consumables. Gear you need once. Consumables, well, they're consumed. If you are crafting on two toons, there's a VERY good synergy between Historian on one toon, and Tinker on anothoer. Kindred with Jeweler guild on Tinker, and kindred of your choice on Historian. The Historian can grow crops with to feed cooking on the Tinker. The Tinker can prospect to level his own Jeweler, and to level Weaponsmith on the Historian.
This lets you craft food, potions, scrolls, hope tokens, all the consumables you will want at endgame. And, for crafting things to sell (or equipment for your own toons), the SM Kindred Jeweler lets you craft jewelry, which is desirable for all classes.

Of the two choices you have presented, I would say without doubt metalsmith. LI's really killed the value of weaponsmiths, and even though they can craft legendary weapons, it's still not enough. For me, leveling up a weaponsmith to Supreme Master was about #5 on my priority list among the professions.
That being said, tinker and historian are both also good choices. Tinker just because every character has, what, 6 jewelry slots? So having one Supreme Master tinker will go a long way towards helping not only your main character, but all of your alts as well. The same thing is true of historians, since scholars make consumables that all of your characters, no matter what their class, will use. (Consumables become more & more important the higher in level you go, in my experience.)
So the way I would answer your question is: in the objective realm, especially for someone who has multiple characters, your first priority (after Supreme Master Explorer) would be with SM Jeweler or SM Scholar. But if you are really interested in matching a profession to a particular character class, then Metalsmith is the best fit for a guardian.

OP,
I chose Explorer because it has all the gold farming possibilities that I want in a first character... Sadly though I did not level a character for a long time after I chose the Guardian as my main. Guardians are too fun to have an alt!
So the Mining, Forestry, and Tailoring went to waste in the end...
Except now I have a Warden that is a Woodworker and can use the armor I get from Tailoring and the wood I get from Forestry!

no matter what profession you take, by the time you SM it, you'll have ways to turn it into profits. I can make helms and shields among other things to make sure I have plenty of money. I love having someone who can make my lowbabies armour to help them get a long. I am currently leveling my weaponsmith, jeweler, and scholar/cook as well. It is kind of nice being able to make them all stuff at once as I level them!
Going the Historian/Explorer route isn't a bad idea. For me though, I'll stick to my armour stuff. While I don't have 200g siting in the bank, I have enough to take care of my house, my alts, and symbols when I need them (as I can't group on this PC).

My guard is a metalsmith and I have over 300g. Course my historian has 200g and my jeweller 100g. Moral of the story weaponsmith is basically worthless and with the other three much money making opportunity.

Scholar is a dead prof. Simple and useful daily quests give you tokens for all the pots a character will ever need. I can't even sell pots at a profit any more. Food is still useful.

My main is a weaponsmith and crafts shield spikes, I don't have a metalsmith so I don't know for sure but I don't think they can craft spikes.
Burgler Tricks, Hunter Traps and Shield Spikes are the main consumables that a Weaponsmith makes though they've added a couple new ones that I still don't have recipes for.
