For Conog and Shaguk you need to be in Rohirrim stance spamming heals until most of the adds are dead. Then you focus on the big guy.

If your guardian is an alt there is no reason to be in tanking gear unless you only use him for fellowships/tanking. If you're just doing landscape stuff then it would be better to be equipping him...
