Heads Up Display. Basically, the thing you can remove by hitting F12. Could you play without seeing your hotbars, health, moral, buffs, debuffs and other stuff.

No. RP is a choice. Those with white letters wished to be interacted with in an RP manner, and will respond in an RP manner. Gold letters are just people playing the game who may RP occasionally.

Not quite. Eregion is lvl 45, but should have some quests in the South East Trollshaws that will get you there.
